Our Story · 2020 N Monroe, Spokane

The Spokane Restaurant You'll Tell People About.

We built it by hand.

Uno Más is a locally owned modern Mexican restaurant and tequila bar on North Monroe in Spokane. We started as a taco shop in 2022 and opened our North Monroe flagship in 2024. We grew into something more. Tacos are something we do exceptionally well — not the entirety of what we are.

The short version

It started with tacos.

We opened in Spokane in 2022. The tacos were good enough that people kept coming back — and kept asking for one more. So we gave them one: a bigger room, a full bar, a real tequila program, and a kitchen that takes modern Mexican seriously. Come for dinner — our dinner program goes well past tacos.

In 2024 we found an empty mechanic's garage on North Monroe and built the whole thing by hand — a cantina downstairs, the Mezzanine speakeasy upstairs, a patio out back. Doors opened December 27, 2024. You can book a private event upstairs, or we also cater across Spokane. We've been a little loud ever since.

The build · 2024

Garage to cantina.

Summer 2024

The empty garage

A worn-down Monroe Street garage — raw cinderblock, a concrete shell, and a lot of imagination.

Down to the studs

We stripped it back to bare concrete and steel. A clean slate to build on.

Framing it out

Walls went up and the footprint of three venues — cantina, Mezzanine, patio — took shape.

Building the Mezzanine

We weren't building one room — we were building three. Upstairs became The Mezzanine: a speakeasy and private-event loft. The room for the nights that matter.

Interior takes shape

Drywall, the bar, the fireplace, polished floors and paint. The cantina started to feel like the cantina.

Who we are

Three venues. One address.

Tacos are something we do exceptionally well — they're not the whole story. Under one roof on Monroe, we built three distinct rooms, each with its own energy. The only thing we take lightly is ourselves.

The Cantina

The Cantina

Ground floor, in a converted mechanic's garage. Lunch, dinner, craft cocktails, full bar — and a TACOS sign you can spot from the street. Loud in all the right ways.

The Mezzanine

The Mezzanine

Upstairs speakeasy and private-event room. Leather lounges, a fireplace, low light. The room for the nights that matter — 21+ after 9.

The Patio

The Patio

Out back: an outdoor bar and street-food kitchen under string lights. Watch parties, big groups, Spokane summers.

The proof

Why people keep telling their friends

A Spokane original since 2022, on North Monroe since 2024. A room people photograph before they order. The kind of place you leave and immediately text someone about. Uno Más Rewards: The Cantina Club members spend 107% more and come back twice as often. That is not a marketing line. That is people voting with their Tuesdays.

The difference

A Spokane spot, not a chain

Spokane has plenty of places to get a taco. This is not that. Uno Más is locally owned, built by hand in a converted mechanic's garage on North Monroe — three venues under one roof you cannot franchise and cannot fake. The food is serious. The vibe is not. That combination is why people call it one of the most fun restaurants in Spokane and the modern Mexican spot they bring out-of-towners to.

FAQ

Questions people ask before they come in

Is Uno Más locally owned?
Yes. Uno Más is locally owned, founded in Spokane in 2022 and built by hand on North Monroe. No franchise, no out-of-town corporate parent. Owner Ramsey Pruchnic and the team run it themselves.
What makes Uno Más different from other Mexican restaurants in Spokane?
Three venues under one roof — the Cantina on the main floor, the Mezzanine speakeasy upstairs, and a seasonal patio — inside a converted mechanic's garage on North Monroe. The food is serious. The vibe is not. We love that Spokane has a real Mexican scene with spots like Borracho and Cochinito. Here is what makes us the one people drive across town for: a modern Mexican menu that goes well past tacos, a serious tequila program, and a room you photograph before you order.
Is it worth the trip across town?
Ask anyone who has made it once. We are on North Monroe in Spokane, behind Indaba Coffee, five minutes north of downtown, with easy parking. Cantina Club members spend 107% more and come back twice as often — people do not keep coming back for the drive.
Do you take reservations?
Yes. Reserve on Resy, especially for Friday and Saturday nights, the Mezzanine, and larger groups. Walk-ins are always welcome on the main floor.
